Creamy Corn Chowder
Serves: 4
Ingredients:
- 8 scoops Glucerna powder
- 1 tablespoon vegetable oil
- ½ medium onion, diced
- 1 stalk celery, diced
- 1 small carrot, diced
- 1 small potato, diced
- 1 cup of corn kernels
- 1 bay leaf
- 2½ cups vegetable stock
- 150mL full cream milk
- 2 tablespoons flour
- 1 rasher bacon, trimmed and chopped
- Parsley to garnish
Method:
- Place bacon into a large soup pot with vegetable oil and cook on medium heat until golden brown. Add onion and celery and stir until softened.
- Add carrots, potato, corn, bay leaf and stock and simmer gently for 5 minutes, or until vegetables are tender.
- Remove from heat and add Glucerna powder, flour and milk together and stir until smooth.
- Return to heat and simmer gently for further 2-3 minutes and remove bay leaf.
