Cauliflower is all the rage at the moment. And with good reason, it’s got an impressive nutritional profile. Just with a few ingredients and the added addition of Glucerna Ready to Drink you can rest assure that you are getting the essential 28 vitamins and minerals your body needs.

Cooking Instructions:
• Heat oil in a large saucepan over a medium-high heat.
• Add onion and garlic and cook for 3 minutes or until onion has softened.
•Place cauliflower and potato in the pot and stir for 5 minutes.
• Add the stock and thyme leaves, then cover and bring to the boil.
• Reduce the heat and simmer for 15 minutes or until vegetables are soft. Set aside to cool slightly.
• Add Glucerna ready to drink and blitz with a stick blender until smooth. Glucerna contains a unique blend of low GI carbohydrates which may help to curb the blood sugar responses in those with diabetes.

• Garnish with parsley and cream and serve with crunchy bread
